That’s exactly what happened when we walked into Avelo, a beautiful little all-vegan restaurant tucked away in downtown Toronto.
At first glance, Avelo isn’t flashy. It’s not a massive, bustling spot with a big neon sign. It’s quiet. Intimate. Tucked on a tree-lined street near Yonge and Bloor, in a small, restored townhouse. But that’s what made it magical. The moment we stepped inside, we knew we were stepping into something intentional.
We were greeted with kindness, warmth, and genuine care. Not the kind that’s forced—but the kind that makes you feel seen. That’s where we met Belen and her friend. And from the very beginning, the experience became about so much more than food.
We went for the five-course vegan tasting menu. (There’s an eight-course option too!) And every dish was thoughtful, beautifully plated, and delicately paired with wines that elevated the experience. But if we’re honest, the food wasn’t the highlight. The highlight was BeLlen—our server—and her quiet confidence, knowledge, and presence.
She knew every dish by heart: how it was made, why it was chosen, what paired best with what. She shared the preparation behind each course with ease and passion, and that care made us feel invited into the process. It wasn’t just about being served—it was about being included.
And Belen’s friend, who we also met and are showing in our shared photo, brought the same open-hearted energy. The kind of energy that lingers long after the plates are cleared. These are the people we created 10,000 Grateful Souls to honor.
So this moment, this experience, is for them.
